Let me start off by saying I have tried A TON of banana bread recipes. I’ve used many different flours…spelt, buckwheat, all-purpose gluten free, oat, coconut, almond, you name it. And no recipe has compared to the results I get in this loaf, nor the accolades I receive from the kids. I will likely never try another nana bread recipe again (the saying is never say never but I am pretty confident using it here).

This loaf is super moist and has just the perfect level of sweetness. The ingredients are wholesome and make this loaf gluten free, dairy free and refined sugar free. It’s a snack I can feel good about giving my kids. We enjoy it best kept in the fridge to enjoy as a cold snacking bread. My kids are all different. One likes to eat his bread with a side of berries, another likes his with a handful of nuts on the side and me? If you know me well then you’d guess I’d like to top mine with a nice smathering of nut butter…cashew or peanut butter are my faves in this instance. This loaf really is a snacking lifesaver for me to have on hand on the fridge. It’s great for packing in school lunches too as a little “treat”.

Chocolate Chunk Banana Bread

Ingredients:

1 1/2 medium ripe bananas, mashed

2 eggs (*see note)

1/4c. coconut oil, melted

3Tbsp. maple syrup

2Tbsp. honey

1tsp. vanilla

2/3c. almond flour

2/3c. almond meal

1/3c. oat flour

1tsp baking soda

1/2tsp baking powder

1/4tsp salt

1/3c. mini chocolate chips (**see note), optional but highly recommended

Heat oven to 350. Prepare a loaf pan by lining with parchment or spraying with olive oil. Mix wet ingredients with a whisk. Fold in the dry ingredients and mix until combined. Don’t over mix. Stir in the chocolate chips.

Pour mix into a prepared pan. Bake in the preheated oven for 35-40 minutes until a toothpick inserted in the center comes out clean.

*Note: I have tried using flax eggs in this recipe several times. The bread turns out however it is pretty moist and it falls in the center.

**Note: Use Enjoy Life or other dairy free chocolate chips to keep it dairy free.
